Hi CHAOS,
Our new plumbing is up an running, however there are issues with the system due to temperature and water pressure.
First, there are on/off valves for the wash table behind the counterflow chiller.
At the end of the brew day those valves should be off and the valves on the table should be opened to relieve the pressure in the lines.
Second, there is a temperature controller on the office wall for the new hot water heater, it an get up to 185*. Whenever the hot water heater temperature is raised above 120* the table valves must be shut off. There are wall valves to control filling into kettles and mash tuns when temps higher than 120* are used. And obviously be very careful when using water above 120*, it will cause burns.
