I am going to try my hand at brewing a wheat beer. I don't know much about them, as I am still developing my palate for this style. The basic inspiration is I want to do a New Zealand style of Wheat Beer. I am going to be using Pacific Gem hops in it but I have no idea where to start on the grain bill. Anyone have recommendations?

Wheat Beer Recipes, Who's Got Em?
While I have never made a wheat version of this I have made a pale ale version and I can see how this would translate well to mostly wheat beer. See the reciepe below. You can go full wheat malt, 50/50 wheat/pils, 70% wheat malt/ 30% flaked wheat, or 60% pils/40% flaked wheat. Mash low at 148. Carb high. Boil the flaked wheat for 15 min before addind to mash. You can sub any new zealand hop in, sub weight, not AAs. Warrior or magnum would work in place of horizon. That and the palasade are your bittering, make sure to hi the IBUs with those.

Oh yeah, also you can sub in 1056 or safale 05, or white labs 001. I like the cream ale yeast because I can control the temp and it really drys out the beer and leaves some nice esters.
