I am a mead newbie, but I want to give it a shot with this group buy for the barrel project that will be dropping soon. I have several questions:
1. What variety(ies) of honey will play best with this floral flavor?
2. Make a tea first, or steep dry flowers directly? The microbiologist in me would prefer to make a tea...
3. How much tea/flowers per 5 gallon batch? I've seen a few different recipes, but I need a starting point. I figure this could be adjusted in the secondary to taste before bottling.
4. Starter, or rehydrate dry yeast and pitch?
I've read up on some nutrient dosing regimens over the course of the first 72 hours also, and I have several yeast nutrients and a packet of yeast on order. Let me know if you can think of any consideration I've missed.
