So like you, I read a bunch of junk about brewing on the random spectrum of the brewing forum world. At some point during my reading I took away from what (I thought) were several credible sources that Star San above a certain temperature would render it unusable (+100F ish). Lots of people had different opinions on this.
So I decided to seek out info from a credible source: the people who manufacture StarSan (Five Star chemicals). Below is what the representative sent me. Turns out, we were all a little bit correct. "Good Morning Brandon,
The water temperature you will want to use is anywhere between 50* to 120*. The closer to 120* the better it works. The concentration you will want to use is 1oz per 5 gallons of water. That will kill off any living organisms. Also, you will want the solution of water and starsan to be a pH of 3.5 or below. If it is above that, it will not be effective. I have attached the tech sheet and the SDS for you to review. They will have a lot of helpful information as well. Please let me know if you have any further questions or concerns. Thank you."
