Hi All,
We need help making food for Harvest Fest!
Here is what we have, but feel free to make anything else you heart desires!
Iggy is grilling of the applewood bacon wrapped hot dogs.
Lucas is apply pie! He needs help. I think he is planning on making it that morning and can use 1-2 people.
Dave is making apple-pulled pork sliders. He needs a couple pressure cookers and 1-2 people to help Friday night.
Steven is making Kraut and we will have beer brats!
James is going to make apple cider BBQ sauce.
Jess is making some pumpkin beer bread!
We need someone to spear head the candy apple making- volunteers?
Other thoughts?

Help Make Food for Harvest Fest
i will also probably make some bigos (polish hunters stew) with apples.
Lucas, do you want to make the crisps at my place?
...igz...
i have an candy apple recipe coming my way and hopefully a volunteer.
...igz...
hey, my kraut is really a slaw that is inspired by kraut. I call it quick kraut; a light saute of cabbage, onions, anaheim peppers, and apples in oil, vinegar and caraway seeds. Served at room temperature it's an amazing topping for sausage or side salad. Chuck claims it saved his life after our last fall feastival, hopefully we'll have lots of buns and brats to keep folks from losing it.
I'm also going to do sloppy seitan sandwiches, and a potato salad. FOOD! We need food folks, bring it on!
I have an electric smoker if dave want to use that. I will try to bring some smoked wings.

So it sounds like we're going to use my smoker for the pork. I'm going to pick it up this week, get the meat all rubbed down, then smoke it all day Friday. We'll then pull the pork Friday night and I'll bring it for setup on Sat.
On that note, I'm going to buy a metric fuck-ton of apples tonight, who was it that had the magic apple peeler? I forgot that I have a work thing from 9-12 on Saturday, so I'm going to try and get the meat and apple pies made before Friday night so all I have to do is show up early to help setup hopefully around 1 - 1:30.
Oh... my... god. Why haven't we done this? http://thechive.com/2013/09/17/guys-rig-up-buddies-plumbing-with-beer-wh...
Also, who was it that had the apple peeler/coring thingy? Any chance you could drop it at the BH this week before Friday?

I just bought one on amazon for $15, I'm gonna go get the apples tonight.
Anyone want to have a peeling party at the BH or my place tomorrow night
for a while?

I was thinking about heading down to the brewhouse tomorrow evening for a short while. If you guys are there, I can lend a hand for an hour or two.
i can help out at BH. was planning on getting some yard elements ready for the weekend, but that should take little time.
...igz...
I'll aim to be at the BH around 7:30 tonight for apple peeling madness. I'll come with pie crusts and topping so we can just make the pies right then and there. Then we can just leave em there, no mess, no fuss.... NO SAMPLES!
Oh... my... god. Why haven't we done this? http://thechive.com/2013/09/17/guys-rig-up-buddies-plumbing-with-beer-wh...
but we must test out the integrity...
...igz...
Very well... if its for science!
I'll expect your test cases, equations, and hypothesis on my desk by 7:30 tonight :-)

Iggy, what food did you guys end up buying for this thing?
we got a metric fuck ton of hot dogs and applewood smoked bacon to wrap them with, two big things of pork shoulder, buns for each, some chips, some peanuts. its the exact same fare as last year. steven also requested a few brats so we picked up a pack of those as well.
i was hoping someone would be interested in making some candy apples. no biggie if not. i think lucas' treats will satisfy the sweet tooth.
steven is making his slaw/kraut, and i will also be making a kraut dish with 4 types of mushrooms, lamb/pork/kielbasa meats, prunes, and apples.
...igz...
How many people did you estimate?
50 hungry people, to 100 people with little appetite - ish
...igz...
i just realized that we are a bit lacking in the vegetarian/vegan dept...
...igz...
Okay. FYI, we have 36 paid members right at this very second who could get through the door. To make sure it's working, I'm going to test the smart phone PayPal credit card reader from the brew house this evening by buying a Trial Membership to get my father in; so that's 37.
I don't know what to do about veggie/vegan options but I'll suck it up and eat meat for a night. Just make sure the path to the port-o-potty is clear later in the night just in case it doesn't sit well...
I'll pickup the meat later too for the smoking madness.

I will probably make a batch of sloppy seitan as a vegan parallel to the pulled pork. I plan to donate my food, which will be in the neighborhood of $100. I did the same for Cinco.
Im making some apple cider bbq sauce for anything that might require sauce.
Jim, I think steven was making some seiten bbq or something like that.
I'm concerned about wasting food.
There was quite a bit of it after Cinco and we had a huge crowd. For Harvest Fest, we've shopped for 50+ and still more food is being prepared when we only have 37 who can legally walk through the gates.
If there's one thing I hate more than wasting food, it's wasting food. Yes, I know we have two fridges at the brew house but that's what we said after Cinco and we still threw stuff out (or it sat in there until three weeks ago when Mark and I with the help of others cleaned out the fridges during the last Tuesday Night Build-Out).
I just ask that we try to limit our food waste: maybe just give it away as people are leaving, or the board/officers take it home, or something. It probably shouldn't stay in a brew house fridge lest it sit there indefinitely and go to waste.
the hot dogs will not be all made at the same time, but moreso as needed. they can stay packaged for a long time. same with the bacon. the pork shoulder is another story, but i can assure you that i will devour the shit out of that over some of my awesome chili recipe. aw' day, ehr' day. believe me, i hate wasting food as well.
i think the main reason the food went to waste as it did at cinco was because it was in fact way too much food. eating it afterwards was risky at best as it wasnt repackaged very well. but i did eat a lot of spanish rice for days. and the hot salsa gave me heartburn for weeks.
we also need to stop thinking only 37 people are walking through the door.

mmmmm smoked meat. as much as i love me some meat & feel that if god didn't want us to eat meat he wouldn't have made it so delicious , i'll volunteer to make something vegetarian/vegan so our non carnivore friends can still enjoy some food. anyone have any suggestions???
Kristin has volunteered to make two pans of her pumpkin bars with cream cheese frosting. One pan will be for me and one for everyone else
Thanks again to Mel, Pete, Jim, and Iggy who came and volunteered for the great CHAOS apple cookoff of 2012!

Just throwing it out there, but is there a need to house a smoker or additional grill at the brew house? I have a weber bullet that is currently in storage right now along with a stok propane grill. We used to have a balcony and now have a shared grilling space, but I can't use the smoker here :( I'd be happy to loan the equipment for the club if it's well taken care of and used for smoking/curing meats there. Would need a hand or two to help transport it though.
Hi, Conrad. I'm not sure about the grill but as far as the smoker goes, we'll have to pass. That's a very nice offer but space is limited and thus things get cluttered. I wouldn't be surprised to find it being used as storage for some misc. brewing equipment when it's not in use. Furthermore I'm not really too sure there's anything around the brewhouse which falls under the category "very well taken care of."
Evan, an easy vegan option is to make sloppy joes with seitan, mushrooms, and black beans. It can be served on a bun or plated just like the pulled pork. You up for making it?
Last night I made a green cabbage slaw for the hot dogs and a purple cabbage slaw for the pork and seitan (5 pounds each). Today I am making 6 pounds of potato salad. None of this is mayo based.
the tummy rumbles...
