Back-Alley Bastard- (Scotch Ale)

Ok, we're set to empty the Bourbon County Barrel on June 30th.  We need another beer for the barrel by that date.  We're going with a Scotch ale recipe created by Kyle and Dave that was never carried out.  It was test brewed and tasted great.  Here's a sneak peak at the recipe, we might tweak a bit but this is the base.  Please let me know if you're interested.  If you originally expressed interest three months ago and still are, let me know and I'll put you on the list.  I'd encourage you to do 10 gallons if you want!  Fewer the brewers, the faster this will get done.

OG- 1.087

10 lbs. Pale Malt (UK 2 row)

3 lb. 4 ounces Munich

1 lb. 8 ounces Cara-Pils

12 oz Malted Oats

8 ounces C-80

2 ounces Chocolate Malt

2 Oz. Peat-Smoked Malt

 

60 minute boil

 

1.25 Northern Brewer (8.5%) 60 mins

2 oz- EKG- 15 mins

2 oz EKG- 5 min

US-05

156 degree Mash, 60 minute

I'm in for this one whatever it is, but I like the idea of a scotch or smoked scotch ale.  That Bourbon County clone was one of my favorites of stout night so I am excited about getting in on the second part of this barrel.

I can try and dig up the

I can try and dig up the backwoods bastard clone I had put together awhile ago when it never took off. I will say though, regardless of what we put into the barrel next, the barrel at this point will probably lend very little "bourbon" character. I would suggest we refresh the barrel with a few handles of shitty bourbon and rotate the barrel for a few weeks before putting a new beer into it.

What the hell it was my intial idea so count me in. Looking forward to this actually happening. Also I think we should re"wet" the barrel with a handle or two of cheap bourbon for a few weeks before our beer goes in so we don't just get oak.

Also Im willing to do 10 gallons if we cant get enough people.

Also just an Idea, A few weeks ago I had a bottle of Cabra by FFF at Dark Lord day. That is there Robert the bruce Scotch ale aged in Barrels with Raspberries. It was one of the best Bourbon barel beers ive had and Id be willing to try and put berrys in ours, but totally acceptable if no one else wants to.

I am going to execute order forbid fruit use since this barrel has been used several times and I'd like to avoid contamination from fruit. 

I'm open to re-treating the barrel with fresh whiskey and bourbon if someone can convince me that the barrel won't get infected from the excessive head-space that I know will be there.  We can't afford 55 gallons of whiskey.  If someone can figure out how to top off the barrel with CO2 while we're rotating it with whiskey I'd be into it.  Kyle, want to do some research?  I imagine it'd just take a special fitting for the co2 hose? 

Also, this is the finalized recipe.  I won't be doing any group buy for it since I'm broke and there aren't any good group buys happening right now anyways. 

Brew away!  We need 3 more brewers for anyone interested.

Date will be contingent on whether we re-treat the barrel.  I was looking for June 30th but it's looking like that won't be ready as I don't know anyone that's already brewed it and we want it to go in already attenuated.

For what it's worth, Bourbon

For what it's worth, Bourbon County Clone is coming out on the 30th, so we'll have to treat it with cheap whiskey and CO2 until the right time.  We should split the cost of the spirits.  Take my advice and go cheap.  The barrel will turn the whiskey good.  What does everyone want to put in?  Whiskey or Bourbon.

Sounds good, I was planning on brewing my batch at some point in June.

Are thinking each person supplies a bottle of cheap bourbon or whiskey?  (My vote is for bourbon.)

I read this article a while

I read this article a while back.

And it explains how we might be able to age the beer as-is then possibly add a splash of bourbon at the end to taste.  I dont have much experience but it an idea we can decide on if it might work.

Or posibly start soaking some oak chips in bourbon and add them in a few months for a little extra kick.

I have a nearly full bottle of Devil's Cut that I will happily donate to the cause.  With all that "intense oak flavor from the heart of the barrel", should be just thing.

I have 5 handles of Canadian

I have 5 handles of Canadian Mist I am able to donate to the barrel gods.  According to Wikipedia: "The product won a "double gold medal" award at the 2009 annual San Francisco World Spirits Competition."

I say we add the bucket of Whiskey that is at the brewhouse back in along with the candaian mist and the devil's cut. Let that sit with co2 until the barrel is ready to be refilled. We will need to do a hot water rinse once we empty the BCS and before we add the bourbon.

brewhouse whiskey won't be

brewhouse whiskey won't be added.  It's been in a bucket for over a year and I don't know if it started to strip out the plastic or not.  I'd just rather not use it.  Lets go with the handles being donated and fill the thing with CO2.
