75 Minute- 2 ounces Willamette
30 minute- 1 ounce Willamette
0 minute- 1 ounce Willamette
Mash at 154-156 degrees, no lower.
OG- 1.129
FG- 1.040
Yeast- US-05- 2 packets, or a starter with equivalent yeast count.
(424 billion yeast cells needed, equivalent to two 11.5 gram dry yeast packets)- Mr. Malty

Worth a shot, but not sure we have enough steam to knock out two large scale barrel projects in one fell swoop.
If we do 10 gal a piece, we had what 15 people interested in the other one. Split it up 7 and 8.
Ken how about we try to recreate a bramble or backyard type RIS. If we brew soon we should coincide with late summer berry picking and we could even do a group field trip or something to one of the fruit farms in michigan or something?
Or we can get a rye barrel and do a cherry rye?
I'd love to do a berry barrel aged beer, but I'm up for whatever the majority of the group decides on for a recipe. Can't wait to get my beer in a barrel!
There are some great berry farms up in Mich that I've picked at, every summer since I was a kid. For blueberry needs, Billy Boys, is the best. http://www.billyboysblueberrybarn.com/ I can look into the raspberry farms too, if needed. Let me know how I can contribute.

Just an fyi-indiana dunes state park has a ton of fruity wild black rasberries. I usually find them in june/july.

Only thing that would suck is that we would have two fruit barrels at the brew house with the first Berry, Queen of Scots and then the Backyard RIS here.
I think you might want to blend the Raspberry in the Scotch ale in secondary to maximize the use of the barrel and go ahead with the summertime berry blending in the barrel here, because I think that is a really cool idea and will resonate at Stout Night.

I know that a second fruit beer is a little against the norm. However i also agree that this one works well and as far as the berry queen of scots goes i want that residual rasberry in the barrel because i want to do a sour in that barrel next and i think it should go quite well.
As far as this group goes. Im assuming everyone is good with 10 gallon batchs each. If so then we are all set. Ill come up with a recipe and get the brew sessions booked. All if you really only wanted to do a single batch let me know asap.

OK, not trying to throw a wrench into anything, but if we are doing ten gallons, is there any chance we can pull off half before we add fruit of any kind? I know that unless we have people willing and able to brew a batch to replace what is taken off it is not really feasible, but if more people are interested I thought I would throw that out as an option. I like the Cherry thing, but it seems risky with a fresh barrel and ten gallons of expensive beer, and I thought it might be a way to do both.
For this one i dont think we should pull out anything extra out. We will have to displace quite a bit already due to the anount of cherrys we would be adding and i dont want to loose any more barrel charachter after we have made sure it was done.
As far as safty of the adding the cherrys i think if we freeze them prior it fends away bad bacteria and also breaks down the cell walls of the fruit for better extraction of the flavor
As long as the RIS is over 10%-11% the alcohol should kill any bacteria on the cherries, but Rich is right to worry.
Ok, I am no expert. I mainly just don't want to end up with 10 gallons of beer-flavored cherry juice. Cherry seems like a hard flavor to make subtle. Then again, if we end up with ten gallons of something close to Cherry Rye, I will humbly eat my words. Actually, I will drink them.
Cherry gets really medicinal. Go smokey, give it a touch of Juniper, hops are needed, I wouldn't barrel age a Gruit unless you want a sour.
Im going to go ahead and move forward with this project. I am hoping that everyone can ge this brewed around the same time. So if everyone can brew by mid march it would be ideal. I am also going to go ahead and change the name of this thread to the new name I came up for this "Cherry Darling".
I will go ahead and also repost the recipe that we will be using in the stat of the thread. Im going to use the same stout recipe that weve been using for out Bourbon county clone unless someone has any tweeks they would want to add to this?
Also it looks like we will have enough room for 1 more 5 gal batch if any one wants to steap up??

How does everone feel about doing a big 1 day brewpalluza and get all the beer brewed for this in one day if we plan far enough in the future?
We can get this done once our 2 new towers of power get up and running for a total of 40gal combined then have 2-10 gal batchs going on the regular burners?
How is april 12th for everyone?
April 12th won't work for me, but don't let that cancel the date if everyone else can make it. I'm only doing 5 gallons, so can brew on my own.
Really any weekend in april is fine for me. I just wanted to throw a date out there so how about if everyone just responds with dates in april that dont work and wecan just pick a common date.

I'll be out of town on the 12th, most likely gone from April 4-13, but I can brew on my own. So I can either brew March 30th or April 19, let me know which you think would be better as far as scheduling for the barrel.

Looks like 1 big brew day is not really feazable with the structure of this barrel. If everyone can get this brewed within april it should work out best. Can everyone update with there planned brew date? I will brew this on April 12th.
Even if we can't get the entire batch brewed in one day maybe we can get 3 or 4 of us together on the 12th and do a 15, 20 gallon batch on the tower of power?
If anyone can be there on the 12th book it. Kyle we can do our batchs on the new tower because it can only do 15gal itll work out. Then from there i guess try and team up if jeff and another pearson brew the same way on the 15 gal system. Then 2 more 10gal batch people can team up on the 3 tier plus 1 additional 10 gal batch.
If anyone is up for a group brew on the weekend of April 5th or 26th, I am up for that. Saturday or Sunday works for me.

12th it is baring the completion of the tower of power. I know the board said the end of march to have the system teaching class, but you never know. Im pretty sure its chuck but does anyone know the official person in charge of putting the systems together, ill devote any time i can to ensure they are up and running and tought to alchamists by april?

Jeff/Nancy - Do either of you know how to run the Tower of Power? If you do, maybe we can brew the 5 gallons that no one is signed up for by doing a 15gal on that. I have the UK -2row I will throw in if we want to do that.
I do not know how to work the tower of power, but I'd love to watch it in action.
Updated just now. Kyle was that missing 5gal. None of us no how to use either system yet. Once there up and running a class will be held on them.
