I might swing by, but can't stay for long. I racked to secondary a few weeks ago - they should be clearly labeled with the tags. You can always send me a text and let me know when a time when you think you'll be getting rolling. 615-504-5298
In general im not happy with it right now. Overall the beer is too roasty (probably from the verying degree of roast on the pecans), very astrigant, and also has a strong spicy almost peppery flavor could be from the barrel not sure what the spirt in it before was like.
Ill test it again in a few months but for now im saying let it ride for a while.
Maybe we can pull a sample off at the barrel workshop get everyones opinions?
On another topic to sum up all the other barrels I tried.
Fuzzy - In short its Amazing!, perfect level of sourness, when its fresh peach season will put those in and give it another month or two then fill this barrel again with something similar and let it go by itself.
Imperial oud bruin - Very tasty, balanced with the oak and bourbon, little to no sourness, if it doesnt develop and starts to get to oaky well take it out as is and people can decide what they want independantly.
Lambic - Been great since begining didnt actually try on thursday its only gonna get better.
SCB 2014 - On its way, very sweet and thick, will be great once we integrate spices.

I don't suppose anyone will have this kegged and carbed in time for the member meeting on Sunday, will they? I picked up a bottle of 2016 w00tstout the other day and thought we could do a side-by-side.
I won't be at the meeting at all, will be driving back from Louisville. My kegs are cleaned and labeled in the ferm room, immediately to the left of entrance. There's 2 gallons of star san in each. I'm sorry I can't help Saturday. Anyone want any special bourbon from KY?

I informed you here to be on the watch around the beginging of November per my post. I then gave a two week heads up to everyone with an exact date to be there. Or at the very least have a cleaned carboy ready and waiting. In short we did not clean a vessal for you and store your beer for you for the past month sorry.

Ive been forgetting about this barrel for a while. I have not tried recently and need to make it a point to try next time im at the brewhouse.
Is this still in the barrel? I would think after almost a year and a half it's time to dump it or drink it.

I want thins one to go for 2 years in the barrel. Its developing quite nicly and I think itll be perfect. Extraction date 11/1/16
Might as well go for three. Rarer than Rare.
well the 1st is a tuesday anyway so ours will be done that weekend 2 years and 5 days. (5 days more rare)

Finally time to empty this barrel we will be doing it the morning of nov. 5th around 10-11. Slso i tried it last week and was realllly nice!
Either have a sanitized keg ready and clearly marked or show up to help. If you fo neither we cannot guarantee your share will be saved
