I think the point is that it is fun when everyone puts their beer up before the season starts, not waiting until the season is over when they know whether they are going to win or lose. Cash would simplify things, you pay up before the season starts or you're out.
What im thinking is either all pitch in cash and having the prize be binnys gift cards or cash plus a craft 6 pack. Essentially simplifying the process of collecting actual beer and leveling the playing field
I hope it is still a beer but I can understand that its hard as hell to get everyone to get the beers in time and people, especially me, bugging you as to what a $50 beer is. Either way, I am in regardless of what the buy in is.

Easily taken care of by requiring the beer by a few days before the draft, then replacing the people who haven't provided a beer.
