No, I think you aren't too late. Not many people re-confirmed once Dave posted the new rules. Please, everyone who wrote that they were interested, please write back if you are willing to commit to be around certain dates. I don't think the ones Dave posted are set in stone yet (correct me if I'm wrong), so there can be rescheduling if need be.
Sean, you are gallon number 30-35 out of 55-60 that we need if I've counted right. I don't want to do 2 shares unless it's necessary, so I'm willing to back down to 5 gallons if it's possible.
Wow - this sounds like a fun project. Looks like I'm too late to volunteer a batch, but maybe I can still make this recipe so we'll have one batch as a control, ie with no time in the barrel, to compare with the finished product.
btw, I think this is really where a good chunk of Chaos should head to. This is homebrewing at its best, doing things that most large-scale or even small-scale breweries could never afford to do. Blending is the next step in beer-making growing from watered down american versions of lagers, into a complex beverage.
Fully fermented or just brewed by january 31?.....and im still in....the only problem is i can never promise. To be somewhere at a certain time....i can promise the beer though.....so just let me lnow if i still qualify..
I've updated the details regarding the recipe as well as some of the obligations and expectations if you choose to brew for this barrel project. Please let me know if you'd like to brew and how much.
Two of your carboys are at the brew house, with thomas'. Those never got the krausen cleaned off completely. They're mostly clean. We got lazy after doing all the other ones.
I'm putting together all the details for this brew, this week. Part of that will be details regarding purchasing some of the malts as a group.
I would also like to build in some structure into this brew...such as a date to have the brew ready by and a date to fill the barrels. I don't want this to be like the last barrel fill we did for the wine barrel. It was basically Daniel and Kyle doing all the work to rack and clean carboys.
I will work on putting together more details and post this week. I'll include more specific instructions, a date to have this brew ready, a date for filling the barrel, and some detail regarding how we will be doing the solera.
Dave, can we get a group buy going on this batch? Like what Niilo did with the Stout? I think we should consolidate orders with the California Common barrel at least for hops, too.
I tried it when we blended and it was a little oaky. During the blend session we pulled out about 6 gallons - I think. And then replaced it with fresh. We should try it again and evaluate. We may need to make fresh to cut down on oak if the dilution didn't help.
I'm still in for 5 gallons

there are two growlers full of us-04 english yeast slurry at the brew house, fresh and healthy from the barley wine.
still on for 5. Will do 10 if there are no takers for the rest.
This plan sounds dope! Still on for 5 gallons. I also have a sack of Marris Otter coming in the group buy, and will pay you for the specialty grains.
I will still love to do 5gallons... 10 if you need me to but that's a lot of grain. All I will need at this point is the MO.

I love the idea and would love to put in 5 gallons if there is room. I've been wanting to do an olde ale for a while now.
What is the story on this barrel? Weren't we supposed to empty this in February?
