I'm mostly just using this to keep records for myself but figured other people would find it interesting as I've had a whole lot of success making oaked beer this way. I purchased a 10 gallon oak rum barrel back when the club first started and have used it since then to make beer. The first beer I made, I removed all 10 gallons. But starting with the second batch, I began to remove only 5 at a time, replacing it with 5 more gallons of a different recipe. The first two beers produced this way were drinkable on their own but starting with the third, it got a bit too woody. I removed 5 gallons and plan on using small portions of this to blend into fresh beers to give them a bit of extra complexity. The fourth is also a bit intense but more drinkable. I listed Chaos events that I've brough the beers to in case you might have had them.
Generations:
0- Worn Horses- a Russian Imperial Stout, served at Stout Night 2012 and the CHAOS beer dinner.
1- Borrowed Horses- a Barleywine, barreled 12/20/2011, served at CHAOS beer dinner
2- Drawn Horses- Old Ale and Barleywine, OA addition on 3/15/2012, entered in beer style AHA competition
3- Quartered Horses-Double IPA, Old Ale, and Barleywine- reserved for blending
3.1- Jeppson's Mutant Horses- Quartered Horses used as a base and blended together with Bondy Barrel Imperial Red, a fresh batch of stout, and Jeppson's Malort- Served at Stout Night 2013, and a portion bottled and reserved for Stout Night 2014
4- Tethered Horses- Russian Imperial Stout made with Oatmeal and Belgian Chocolate, IIPA, Old Ale, and Barleywine- for Stout Night 2013
