I want to use some up some leftover grains, yeast and hops I have. Here's the rundown,
2gal. all grain, mash for 60min at 154f, batch sparge at 170f
The leftover grain:
3lb pale 2-row
1lb crystal 80L
11oz smoke malt
8oz chocolate malt
8oz oats (too much? not enough?)
Leftover hops:
I have 2oz of whole leaf centenial... was thinking of just hopbursting and having no bittering charge.
1oz@ 15min and 1oz@ 1min...
Leftover yeast:
Wyeast 1187 Ringwood, just the smackpack but that should be plenty for two gallons.
Primary as long as it needs (prob. 4 weeks), bottle and let carb.
OG:1.072
FG: 1.018?
IBU: 52
SRM: 43.4
Thought? Comments? I'm just having fun with this batch, not really sure how it will turn out so if there's something you guys think would be fun to do just let me know.

Just wanted to throw in an update on this brew... I brewed it to just about the specs above, no oatmeal but I did add 2lbs of brown sugar a few weeks into primary which brought my OG to about 1.110. It fermented out really well and is tasting pretty good. It is sitting in secondary right now waiting for the oak spirals in the group buy. I'm just going to add a small amount of oak after I steam it and let it age for a long time. This thing needs a lot of time anyway so I figure a tiny bit of oak for a long time instead a lot of oak for a few days. Derek Bondy tried this as well as Daniel Barker so you'll have to ask them what their thoughts are.
thomas, i have some loose grains left over from the nut brown ale. i can toss them in. there is some chocolate in there! and we have a mash tun at the brew house.
i also think 'brew stew' would be a good name for it!

I'm gonna dub it "Smoke Oatmeal Brown"... now all I need is 3lbs of 2-row and a mash tun. I really don't feel like going to brew and grow for this, help?

Anyway I have done beers like this, only some times I have left over mystery malts that I toss in as well...
