I have a couple of Kombucha cultures that I would be happy to share with anyone interested. I can also help you get started if you're new to making the stuff.

Kombucha cultures
A lot of ginger to taste, lemon juice, sugar, we used some fancy stuff where the molasses hadn't been separated, and a bit of green tea to keep the mother happy not so much for taste. Typically real ginger beer is made with a SCOBY Ginger Beer Plant, but that's impossible to come across so we just used our regular SCOBY which is a different bacteria and yeast strain but does similar things. We drank it before it dried out completely so it was fizzy and sweet, especially a bottle we capped and let sit out for a day before putting it in a fridge. You can also back sweeten it if you let it get too dry and that will get it fizzy again.
Can you elaborate more on how to make ginger beer? And also using the Kombucha SCOBY to ferment it?
I could probably pull off several cultures as well if people are looking to get started with this, I've done well making ginger beer out of it.
I'd be down for helping out with the work shop too. I have some SCOBYs and have been experiment with carbing kumbucha in bottles ( with suger and with fresh juice)
